Grown in the highlands of Cauca near the town of Santander de Quilichao, this coffee sings with flavors of milk chocolate and fruit. Complex floral and caramel aromatics, exciting bright fruity acidity, and a beautiful creamy body make this one of our favorite in-house coffees. Our friends at Fondo Paez have a highly democratically organized cooperative model that addresses the specific needs of each of their 23 communities. Encouraging individual community autonomy while functioning as a single cooperative producer is a challenge throughout the coffee producing world, but Fondo Paez is an exemplary organization of productivity and democracy.

  • Aroma: Cane sugar, slight red berries
  • Flavor: Caramel, chocolate, plum, tropical fruit
  • Acidity: Medium plus
  • Body: Big, silky

Great complex flavor profile that produces a deliciously smooth cup of coffee. Superior quality coffee at a great price! I will continue to get my coffee here as Sweetwater cannot be beat.
