Located in the remote, highland regions of Cauca, the Paez (who also call themselves Nasa, or “the people”) is the largest indigenous group in Colombia. Fondo Paez was founded in 1992, with the primary goal of recuperating traditional agricultural knowledge and indigenous culture which had been buried by centuries of conflict and oppression. Today they are active members of the fair trade community and process, market, and export their coffee via the regional plant at ExpoCosurca, but maintain full independence in their internal decision-making process.

I’ve tried a lot of coffees over the years, and this one has become my favorite. The flavor is incredibly smooth, rich, and well-balanced, with a naturally creamy mouthfeel. It has delicate notes of toasted nuts and a subtle sweetness without any bitterness. The aroma is deep and inviting from the moment you open the bag. What I appreciate most is that it’s not over-roasted. If you prefer coffee with a clean, refined flavor instead of a burnt or smoky taste, this Colombian Cauca is an excellent choice. It’s full-bodied yet gentle, making every cup enjoyable.

Not great flavor. Lit was my error in choosing a light roast. We prefer a medium roast. I’ll be more careful with the next order

We only drink our coffee black made from fresh ground organic beans. We are so happy with the organic FT whole bean light roast columbian beans that we bought from Sweetwater. What a find! We will be back!
