Maya Vinic is one of our longest standing producer-partners.  Founded in 1999, the Maya Vinic cooperative is comprised of about 650 small-scale farmers who embody a strength, resilience and commitment to sustainability that inspires us. Learn more about the founding of their cooperative and how, after nearly 20 years of coffee farming, their quality is better than ever. 

From our cupping table:

  • Aroma: Sweet, cocoa, dried fig, mild vanilla
  • Flavor: Sweet, clean, toasted nuts, hints of dried fruit
  • Aftertaste: Cocoa
  • Acidity: Medium plus, citric
  • Body: Medium and smooth
  • Balance: Consistent, balance leaning toward acidity
  • Overall/Notes: Drinkable and sweet with an eye-opening acidity. Classic Chiapas, very nice cup.

Our Favorite!

We have been ordering the Mexico Chiapas blend for the past several months, and we love it! The flavor is well-balanced - strong and flavorful but not bitter. It has been become our favorite daily coffee.

I use pour over method...medium grind and this is delicious. No bitterness..even flavors!
